Slow Cooked Chicken Fajitas

Sundays are perfect for slow cooked meals especially when football games and my Podcasts play a major role in them.
.
So if you are looking for a quick and easy meal that will satisfy your family or a Big Game crowd, then try this slow cooked chicken fajita recipe.
 
Ingredients:
  • 2 lbs boneless skinless chicken tenderloins
  • 1 (16.5 oz) jar Salsa
  • 1 red, orange and yellow pepper, julienned
  • 1 package Fajita seasoning mix
  • 1 large onion, sliced
For serving: Whole Wheat Wraps or Tortillas, Sour Cream, Cilantro, or Cheddar Cheese and Frank’s Red Hot Sauce

Instructions
  • Place 1/2 of the sliced peppers and onions on the bottom of the Crock Pot and top with chicken tenderloins, crisscrossed.
  • Evenly sprinkle entire package of the seasoning over chicken tenderloins.
  • Pour in 1/2 jar of salsa, then layer on remaining peppers and onions and top with remaining salsa.
  • Cover and cook on HIGH heat 3 – 4 hours or low heat 6 – 8 hours, until chicken, has cooked thoroughly and veggies are tender.
  • Stir to mix all ingredients then ladle onto warmed tortillas or wraps and top with shredded cheese or sour cream and optional hot sauce.
