Ingredients for this easy breezy meal included:
- 1 Green Pepper
- 1 Sweet Onion
- 1 Jar of Organic Medium Chunky Salsa – 16 oz
- 1 family pack of fresh Chicken Thighs
- Few sprigs of Flat Parsley
Slice green peppers and onions.
Place chicken thighs in the Crock Pot then top with sliced onions, green peppers, parsley, and pour in one full jar of chunky salsa.
Cover and cook on high for 4 hours
I threw in a few Cherry Tomatoes that were left over from the week.
I served Black Beans for hubby and my son.
