Stuffed Green Peppers

Well we made it through another amazing week and tomorrow I will be traveling to DC to give a Keynote Speech – so it’s going to be an exciting weekend as well.

For this Friday Foodie Feature I had planned on making Stuffed Green Peppers in the Crockpot, but the day got away so I decided to just pop them in the oven which was just as good.

Stuffed Green Peppers

Ingredients

4 – Green Peppers, rinsed, cut off tops and remove membrane and seeds

1 – lb of Ground Turkey – cooked

1 – Jar Marinara / Pasta Sauce

Pepper Jack Shredded Cheese

1 – Tsp Minced Garlic

1 – Small Bag of Cooked Brown or White Rice (4 servings)

Instructions

Rinse peppers, cut off tops and remove membrane and seeds, place in a pot of water and boil until peppers are soft.

Preheat oven to 350 degrees.

Cook Ground Turkey in a pan on medium heat until no longer pink.

Boil Rice in separate pan then combine the Ground Turkey and Rice into one pan.

Pour in Pasta Sauce and the Minced Garlic sprinkle on a little Black Pepper (optional)

Stir until all ingredients are thoroughly mixed.

Using tongs or slotted spoon, carefully remove soften peppers from pot of water and place each in a foil lined glass dish or cake pan.

Scoop in the Ground Turkey, Rice and Sauce mixture into each of the Green Peppers then top with cheese.

Place Stuffed Green Peppers in pre-heated oven and cook for approximately 15 minutes or until cheese is melted. You can put the top of the Green Peppers back on before placing in the oven or just cut them up to eat as a snack or add to a salad!

This is a perfect mid-week meal or Sunday Supper and if you are lucky you will find Green Peppers on sale for about 59 cent each as these were at Food Lion.

  1. We eat red peppers nowadays – sweeter – I like them stuffed but mostly raw, julienned into salads. Or, husband (the family cook) makes chicken kebabs with chunks of onion and red peppers.
