Let Them Eat Cake – No! Let Them Eat Slow Cooked Chicken and Veggie Soup for Valentine’s Day

Happy Valentine’s Day To All The Sweeties Out There

This is the 1st year of being sugar free thanks to my Type 2 Diabetes diagnosis. Therefore, I will not be eating any sweet treats. Instead I plan on eating a big bowl of good all fashioned Slow Cooked Chicken and Veggie Soup.

So if you are watching your weight or are also on a restricted diet and looking for something not so sweet to eat, then give this recipe a try. This is a simple Slow Cooked Chicken and Veggie Soup recipe made with chicken tenderloins and fresh vegetables.

I chose to use spinach, carrots, mushrooms, parsley, onions and celery and a container of Low Sodium Chicken Broth. The house was smelling so super good while it slow cooked thanks to the Fresh Rosemary and Fresh Thyme.

Ingredients:
1lb fresh Chicken Tenderloins
1 small bag of Baby Carrots cut in half
1 Bag fresh Spinach
4 stalks of Celery
1 container of Whole Button Mushrooms
1 Large Onion
Several Springs of Parsley
Several Springs of Fresh Rosemary
1 Container of Low Sodium Chicken Broth

Load your Crock pot with all these colorful, chopped veggies, layered then top with the chicken tenderloins and sprinkle with those fresh herbs. Cover and slow cook for 4 hours on High or 6 to 8 hours on low depending on your Crockpot.
