I am so excited!!! After more than 5 years, I finally made another pot of Slow Cooked Oxtails!
If you have been following my blog for awhile then you know that the last time I slow cooked Oxtails, the end result was disastrous with me making a trip to the Emergency Room and stitches in my pinkie finger.
If you don’t remember or never knew, check out this post to read more about my kitchen disaster!
So obviously being a little gun shy, I decided not to add as many ingredients as the cost of Oxtails has risen so high that I needed to budget accordingly; also the sizes of the Oxtails are smaller and cut thinner so I didn’t want to overpower them by too many ingredients. Therefore, I only used 3 and served it over white Rice and it was AH-MAZING well worth the cost of the cut!
Ingredients
-
- 3-4 lbs of Oxtails
- Jar Sweet Italian Peppers
- 1 Medium Onion sliced
I did however, marinate the oxtails overnight using Margaritaville Calypso Rub and putting them in a Ziploc Bag refrigerated overnight.
Instructions
- Place marinated Oxtails in the Crockpot
- Pour in the jar of Sweet Peppers
- Add sliced onions
- Cover and slow cook for 6-8 hours
- Serve over White Rice (optional)
Let me tell you, by the 4th hour the house was smelling so good that I couldn’t wait for dinner to be done! So if you are looking for a delicious meal for a family of four – this is definitely well worth the cost!
