Hubby loves Eggplant Parmesan however, I have never attempted to make it and had only purchased it frozen.
So a few weeks ago while shopping, I decided to check out a few online recipes and buy the ingredients only for it to become an Eggplant Parmesan FAIL!

The ingredients were simple enough; an Eggplant, an Egg, Panko and Marinara Sauce.
The recipe said to slice the Eggplant, however, my slices were too thick. I was to coat each slice with beaten egg and dredge them in the Panko.

Placed each coated Eggplant slice in a baking dish then poured in the Marinara Sauce to cover. Put the baking dish in the pre- heated oven at 350 degrees for approximately 45 minutes.

Simply enough right? – WRONG!
The 1st fail was that I cut the slices too thick with the skin on; failure number 2 was that I did not soak the slices for 15 minutes prior to putting coating them with egg and dredging in the Panko, failure number 3 was that I didn’t cook them long enough!

It may have looked good but they were tough and didn’t taste that great, but hubby ate a few anyway…that’s just one of the few reasons why we are still married for almost 29 years!
