Roasted Curry Cauliflower Recipe

Since my diagnosis of Type 2 Diabetes I’ve been staying away from anything white…white potatoes…white bread…white rice…white salt and anything made with white flour, even though I never really ate any of those foods.

I however, have taken a liking to Cauliflower, including Cauliflower Fries and most recently Mashed Cauliflower. I have tried two brands one made by Hanover Foods and the other one by Green Giant.

I liked them both but when I posted a question to Facebook there were several people who suggested that I try making it fresh so that’s what I did this week.

Ingredients for Roasted Curry Cauliflower

I instead chose to roast rather than mash so I purchased a medium size head of Cauliflower, cut it in half, then cut the florets from the stalks.

I placed the florets on a baking pan, drizzled them with Extra Virgin Olive Oil; sprinkled on a little Pink Himalayan Salt and Jamaican Curry Powder.

Placed the Cauliflower in a preheated oven at 350゚ for approximately 45 minutes, checked for doneness and it was just soft enough for us.

You can leave it in the oven a bit longer if you want to mash the Cauliflower then sprinkle with a little fresh Parmesan Cheese.

It was a quick and easy recipe that both hubby and my son loved and it complimented the Turkey Loaf also baked inside the oven.

  1. Good morning dear Del and thanks for this simply great recipe. Yes, it is a very healthy, low calorie addition to your regular diet; unfortunately it stinks a little when you boil it, but …nothing is perfect in this valley of tears, dear. A big hug. Arrivederci!
