Grilled Potatoes in a Pouch

The sun is setting earlier which means that Summer is quickly winding to a close, yet it’s not the time to shut down the grill.  If you remember this post with the Grilled Beef and Veggie Kabobs then you’ll remember that I said that I also made grilled potatoes in a pouch.

Here is the recipe for this quick and easy grilled side dish which I also made for my friends when they came to visit at the end of July.

 

INGREDIENTS

  • 3-4 Russet potatoes washed and sliced
  • 1 Medium sweet onion sliced
  • 4 leaves of fresh basil
  • Aluminum foil
  • Butter Cooking Spray
  • Seasoning salt to taste
 

INSTRUCTIONS

  1. Heat grill over medium heat.
  2. Pull out pieces of aluminum foil for individual servings
  3. Place a few slices of potatoes, onions, and basil in the center of foil
  4. Coat with Butter Cooking Spray
  5. Sprinkle with seasoning salt if desired.
  6. Place another sheet of aluminum foil over top, then wrap all sides to make a pouch but don’t seal too tightly as to not allow potatoes to steam.
  7. Place the foil packs on the top rack of grill.
  8. Close the lid and grill for about 10, flip the pouch and cook another 10 minutes.
  9. Open foil pouch and serve.

We’ve all heard the saying, “if you can’t stand the heat, stay out of the kitchen”, well that’s exactly what I like to do especially in the summer.  There is also something about grilling food outdoors that makes it taste better.

During the 4th of July holiday, I grilled barbecue chicken which is definitely our favorite meat, however, I wanted the mini men to have a bit more protein, so I purchased two packs of beef cubes.

The beef cubes were marinated overnight, the mushrooms were washed thoroughly after the stems were removed.  The red pepper was washed and diced as was a medium sweet onion.  The cherry tomatoes were rinsed under cold water and the wooden skewers were soaked in cold water in a pan for about 15 minutes.

Alternating the meat and veggies on the wooden skewers the kabobs were then placed on the pre-heated grill for approximately 8-10 minutes, turning them once and using a brush to coat the kebobs with some of the remaining marinade.

Needless to say, the mini men really enjoyed their meal which was served with roasted potatoes and onions also grilled, a recipe I will share at a later date.

Turkey Burger Toppings

Yay, it’s summer which means pool parties, outdoor fun and of course outdoor grilling and one of my all time favorite grilled foods are Turkey Burgers!

However, it doesn’t matter where my burger is cooked, whether it’s outdoors on the grill on the inside on a George Forman grill, what tops my burger is what is really important to me!

 

I also prefer using Sandwich Rounds versus hamburger buns because I like to cut back on the carbs especially in the warmer weather and it’s really the tasty turkey burger and toppings that matter the most to me!

Hubby likes his Turkey Burger topped with lettuce, tomato, raw onions, sautéed mushrooms and sweet peppers, white American cheese and a little yellow mustard. 

 

Malik on the other hand just spreads his bread with a little sweet and spicy sauce and that’s it, I find it boring and it must be a college thing because I definitely don’t understand it!

 

Tayair is not as boring, however, he only tops his burger with cheddar cheese, pickles, ketchup, and relish with a few chips on the side. 

 

However, for me, basically, I like putting a salad on my burger because it has to have lettuce, tomato, raw onions, cucumbers, sharp cheddar cheese, spicy mustard and pickles on the side.
