Well, we made it through another grillin season so now as we gear up and speed towards the holidays, it’s time to pull out the Crock Pot! I actually made this Crock Pot Chili a few weeks ago when the weather was cool and damp.
It’s one of our favorite slow cooked meals and because it’s so simple to make with pre-cut veggies and canned beans, it’s perfect for every level cook. You can substitute the ground turkey for ground chicken or beef and use dried beans if you prefer.
Ingredients:
- 2 lbs of Ground Turkey or Chicken or Beef
- 2 cans of Black Beans
- 2 cans of Dark Kidney Beans
- 1 can of diced tomatoes
- Diced Onions, red, yellow and green peppers
- 1 Package Chili Seasoning
- Sour Cream (optional)
- Hot Sauce (optional)
Instructions:
- Coat skillet with cooking spray
- Over medium heat cook ground turkey/chicken until no longer pink
- Drain and put into Crock Pot
- Rinse the lids of the beans and diced tomatoes
- Pour over cooked ground turkey/chicken
- Stir in Chili Seasoning
- Top with raw veggies
- Cover and cook on high for 2 hours or low for 4 hours
Serve over rice or with corn muffins and topped with sour cream and hot sauce which are both optional.
