In keeping healthy with my new diabetic diet I am trying out new recipes so that our meals are a bit more varied yet tasty. On Monday, I made oven Baked Turkey Cutlets covered with fresh Spinach and Cherry Tomatoes.

I purchased a 4 pack of fresh Turkey Cutlets from Giant Food and placed them in a plastic bag, sprinkled in some Washington Chicken Breading coating, Organic Thyme and Crushed Rosemary for seasoning.

I placed the Cutlets on a foil lined glass pan and sprinkeld on a little Olive Oil and placed the pan in a pre-heated 350 degree oven and baked for approximately 30 minutes.

I then spread the washed Spinach and Cherry Tomatoes around the edges of the pan, sprinkled on a little more Olive Oil and baked for additional 10 minutes, until the Turkey Cutlets were done.

Hubby and Tayair ate their’s with rice I had mine without rice and it was delicious.
