Today’s Friday Foodie Feature was not only filling it was also very inexpensive! I purchased the bags of Pinto Beans at Food Lion recently at 2 for $1.00 and it made more than enough for a family of four for two days!
There is something amazing about the cooler weather and Crocktober; it is definitely one of the best times of the year, as it’s when you can create comfy foods without too much effort before the month of big meals begin.
Ingredients
1 – Bag of Pinto Beans
1 – Container Vegetable Broth
2 – Frozen Smoked Turkey Legs
1 – Medium Onion
1 – Cup Rice (optional)
Instructions
Pour container of Vegetable Broth into Crock Pot
Add Frozen Turkey Legs
Cover and turn Crockpot on High and slow cook turkey legs for an hour
While Turkey Legs are cooking, rinse beans in cool water, drain
Add Pinto Beans to Crockpot and add diced onions
Place cover on Crockpot and continue cooking on high for another 3 hours
If using rice, add to Crockpot with a little water if necessary then stir and cook for an additional hour or until rice is tender
Remove lid and serve with biscuits or cornbread and sprinkle on a little hot sauce for added kick
