Slow Cooked Beef Cubes

This just may be the last slow cooked meal of the season because come next weekend it will be on and poppin with the grill and I can’t wait.  Can you believe that it’s already May and Memorial Day is only a few weeks away?

Well last Sunday before the Podcast I made this easy breezy Slow Cooked Beef Cubes meal for dinner.

As you know, we don’t eat a lot of red meat, but every once in awhile I get tired of cooking chicken and fish so I’ll get either beef cubes or flank steaks.

This is a really easy meal made with only four ingredients and can be made using any flavored sauce. There was a sale on Bertolli brands at Food Lion so I decided to try the Vodka Sauce.

Ingredients
  • 2-3 lbs of Beef Cubes
  • 1 Jar of Bertolli Vodka Sauce
  • 1 Medium Sweet Onion – sliced
  • 1 Medium Green Onion – sliced
  • Rice (optional)
  • Vegetable of choice
  • Cooking Spray

Instructions

  • Spray inside of Crock Pot with Cooking Spray
  • Slice Onions into rings
  • Cut green pepper, discard the membrane and seeds then slice
  • Place beef cubes into Crock Pot
  • Pour in entire jar of Bertolli Vodka Sauce
  • Top with Peppers and Onions
  • Cover
  • Cook on low for 8 hours or on high at 4 hours
  • Serve with a vegetable over rice or noodles

Optional recipe for Cinco de Mayo
Shred beef cubes and wrap in Tortillas topped with shredded cheese, lettuce, sliced tomatoes and avocado
