Family Meal Made for Less Than 2 Bucks

 

If you read this post with the recipe for Boiled Plantains then you know that during the recent Grand Opening of the Lidl (lee-tle) grocery store in Middletown, they had some great bargains.  In addition to the fresh fruits and veggies, they also had a good deal on their Jasmine Rice, Cooking Sauces and fresh chicken, so in using these three ingredients, I was able to create a tasty meal for 3 for less than 2 bucks each!

Ingredients:

2 – Packages thinly sliced Chicken Breasts or Cutlets

1 – Cup Jasmine Rice -prepared according to package directions

1/2 – Jar Cooking Sauce – I used Tikka Marsala Sauce

Olive Oil Cooking Spray

 

Chicken Marsala

 

Instructions:

Preheat oven to 350 degrees

Place chicken breasts/cutlets in a glass baking dish pan coated with cooking spray

Pour 1/2 jar of Cooking Sauce covering each piece

Rinse and cook Jasmine Rice according to directions

Cover baking dish, and bake 25 minutes in the preheated oven, or until chicken juices run clear

Serve over rice and enjoy!

  1. That is sure looking good to me! Oh and that new store will be opening in my city of Raleigh soon but sad thing is I am staying up north for now in RI lol. I will get to it when I get back. Going to pin it.

  2. Looks good! I need to try cooking with curry more. We recently at some curry veggies and we loved the taste.

  3. You know what? I have never cooked with curry, even though I love the spices. My girls think curry is too spicy, but I think I’m going to get some anyway after reading this post. I love the meal idea; you can’t beat a less than $2.00 meal!!!

    1. It really isn’t too spicy but I understand the girls because it is an acquired taste and very healthy too. You know me, I am cheap and always on the lookout for a bargain!

  4. This looks like something I could eat here. I’ve been doing a lot of chicken breast recipes this week myself so I better hold off on trying it before I make my family chick of chicken breasts lol.
