The weather this month hasn’t been as warm as it usually is so I haven’t fired up the grill yet…as a matter of fact, I haven’t even uncovered the pool which I normally do on Mother’s Day weekend.

Well, it may still be a bit too chilly to start cooking outdoors, but it’s not too chilly to start cooking lighter which is why thisTurkey Pasta Salad was perfect for a mid-week meal.
If you have been following along on my Instagram page you would have seen that I received three flavors of Jennie-O Smoked Turkey and the one that I used for this recipe was the Hickory Smoked Cajun Style.
Ingredients:

1 – 12 oz box of Rotini Pasta

1 – package Hickory Smoked Cajun Style Turkey – diced
-
1 – small onion – diced
-
1 – container of cherry tomatoes – sliced

Dressing of choice
-
Shredded Cheese
Instructions:

Preheat oven to 350
-
Prepare Pasta according to cooking directions, drain

Place Turkey Breast in a pre-heated oven for 20 minutes
-
Wash and cut Cherry Tomatoes in half
-
Peel and dice onion
-
Drain pasta and place in a large bowl, add diced Turkey Breast, diced tomatoes, and onion
-
Toss with a little dressing and top with shredded cheese
